Prep Tips
Make cooking at the campsite easier by doing these steps at home:
- Sloppy Joes: Can be made ahead, then reheated in a pot at the campsite.
- Pasta Salad: Buy at the store or prep your favorite recipe at home before your trip.
- Pancakes: Measure and mix the dry ingredients together at home, and store in a zip-top baggie.
- Chipotle Grilled Chicken: Make the marinade and add it to a bag or container with the chicken. Make the pico de gallo (or use store-bought).
- Corn on the Cob: Pre-cook the corn in your Instant Pot at home (here’s our recipe), then reheat it on the grill at camp.
Packing Your Cooler
Knowing how to pack a camp cooler properly is essential when you’re bringing prepped-ahead meals or ingredients. Lucky for you, we have a guide to help you master the art of packing a cooler to maximize ice retention and keep your food safe. Here are some additional tips for packing this week’s food:
- Use watertight, resealable containers to store food.
- To store herbs like cilantro and green onions, gently wrap them in a damp paper towel and store them in a zip-top bag. Place them on top of the ice/other food items.
- We like these egg holders for protecting our eggs in the cooler.
- Where possible, put the last day’s food on the bottom, and work your way towards the top with the first day’s food.
Meat-free Alternatives
- Use our red lentil sloppy joe recipe on Friday night. This can also be prepped ahead at home and reheated on a camp stove.
- Swap out the chicken with drained extra-firm tofu for Saturday night’s tacos. Use the same marinade. Prep it and start the marinating process at home. Place this on the top of your cooler to avoid squishing the tofu.
